About Us

Through an unfiltered expression of his native food and culture, Chef Carlos brings a true Mexican experience to the Downtown Disney® District — taking guests on a multisensory journey to the heart of his home country.

From our refreshing margarita classica to crispy Baja tacos, each item is artfully crafted. The open, airy space captures the feeling of sitting outdoors beneath a leafy tree canopy in Mexico, with natural wooden elements and lush greenery throughout.

Chef Carlos was born in Huitzuco, Guerrero, Mexico, where he fell in love with cooking at a young age — exploring the flavors of heirloom recipes alongside his mother, Doña Teté.

Craving adventure, he moved to Chicago, Illinois, eventually becoming the first Mexican-born chef to earn a Michelin star. A 2013 contestant on BRAVO’s Top Chef and appearing as a judge on cooking shows in the US and Mexico, he’s become a widely recognized ambassador of Mexican cuisine throughout the world.

His restaurant Tzuco in Chicago has received numerous awards and acclaim, including Eater Chicago’s Best Design honor in the 2019 Eater Awards, Best Design in the Jean Banchet Awards in 2020, and semifinalist status in the prestigious Best New Restaurant category by the James Beard Foundation Awards in 2020.

Now, Chef Carlos is excited and honored to bring Céntrico to Downtown Disney.
